taco soup-day

get it?!?! taco soup-day, taco tues-day!?!?

i know i'm so funny it's really not funny!

wednesday i was extra home-makerish and made mini pimpkin muffins with cream cheese icing for breakfast, and taco soup for dinner. everyone asked for the recipe so here it is! every week i'm going to make a yummy, delish, warm your tummy and heart kind of soup and will post the recipe on Friday.

here's to your happy soup-making fall!

taco soup

1 1/2 pounds of lean ground meat or ground turkey
4 cups of low sodium beef broth
Corn
1 can of petite diced tomatoes
1 small can of diced green chilis
1/2 white onion diced small
1 can of beans rinsed (i like pinto or black the best)
salt, pepper, ground cumin, 2 garlic cloves (or garlic powder), chili powder

side note: yes we do organic on all of the above except the meat (because that's really expensive and we don't have much of a selection of that in little A-Town). do what you want, but you know i'm a hippy... so organic we go!

in a big stock pot put beef broth with equal amounts of water (add 1 more cup later if it's too beefy for you, or even more if you want it more soupy. i like ours more stoup-ish, so i make it with a little less water), can of tomatoes, chilis, onion, corn and beans of medium heat.

in a pan, cook meat. season with a little bit of salt, pepper, and one clove of garlic.

after meat is cooked drain if needed, add to beef broth.

add the rest of the seasonings. all are to taste. i like my soup really garlicy, that might not be your cup of tea - so just do what tastes good to you. but DEFINITELY add the ground cumin and chili powder. even if you think you don't like it - you will. trust me. this tan doesn't lie.

bring pot to soft boil, reduce heat to medium low and let simmer for 30 minutes or so.

ladle into bowl.

top with some or all of the following: diced avocado, shredded cheese, pico de gallo, sour cream.

eat. get some more. be happy.
